What a yummy (busy) week!!
The BBQ last Sunday feels like ages ago, especially now that it can't stop raining here in Toronto!
My favourite BBQ'd veggie burgers, balsamic brussel sprouts, & a sweet potato - classic!
Making dessert on Sunday is now one of my favourite things!! This recipe was incredibly yummy and Joey & I couldn't get enough! Stay tuned for more desserts on Sundays. It might become a regular blog feature!
Asparagus, kale & tofu stir fry over brown rice
I made it a little differently this time around. I marinated the tofu in tamari, apple cider vinegar, sunflower oil & water before frying them up. I added the yummy hoisin sauce along with the veggies and stir fried it all up. This is definitely one of my favourite, simple meals.
The black bean chili from Ultimate Foods for Ultimate Health was so good. Joey proclaimed it his favourite chili!! It was hearty and so easy. I've really enjoyed everything I've made from this book.
I was craving a snack before boot camp last Wednesday so I had a sliced kiwi, blueberries and a combination of pumpkin seeds, raisins, walnuts and sunflower seeds.
It was a great snack! I'm never super hungry after boot camp, so I enjoyed an Almond breeze-banana-almond butter smoothie when I came home.
I love the banana - almond butter combination. It was so hot, boot camp was *tough* and I was so sweaty that night.
I made a little trip to Whole Foods on Thursday...
There's only 1 in Toronto and I find it a little out of my way and a little pricey so my trips are limited! I picked up some soy milk, larabars (2/$3), coconut water, soy yogurt, rice crackers and Free POM. I enjoyed some of the coconut water on my way home from boot camp on Monday.
I wasn't sure what to make of it at first, but decided to finish it and it got better as I went along! Coconut water is like nature's gatorade. It's full of 5 essential electrolytes: potassium, sodium, magnesium, calcium and phosphorous. I felt good after drinking it and it definitely quenched my thirst. (Please note - boot camp isn't getting any easier!!)
On Saturday Joey and I grabbed some lunch after my meetings
My warm brown rice salad plate was perfect and beautiful with all its colours. Since it had been his birthday last week I treated him to some Indian food for dinner.
We shared a chicken dish and some aloo gobi with rice. When Indian food comes to the table, the dishes always look so small, yet there is always too much food and leftovers!! And we came home to find some visitors sifting through our garbage bin...
As cute as they are in the picture, I wouldn't have wanted to encounter them on my own!! I think they were a little sad that they didn't find any garbage...
Check back later this week for my June activity results, plus 4 week progress measurements from Boot Camp!
Happy Canada Day to my fellow Canadians!!

I'm totally going to Whole Foods when I come to TO. Yah, that's right I'm going on vacation and I'm planning on coming home with a suitcase full of food. Ooh I'm so excited to buythe coconut water! So many people rave about it! :)
Awww those raccoons were sooooooo cute!! I know that lots of people think of them as pests, but I just love them :)
I start boot camp on Monday and with each day I get more worried that I'm not going to be able to do it. I've even been having lots of "Maybe I just won't go" ... "I don't want to make a fool of myself" ... "I'm exhausted after work, I can't do this". I'm also worried that I'm going to be the only one that is 200+ lbs and waaaay out of shape. I'm trying to push those thoughts aside, I will go.
Your indian food looks delicious, I love eating any and all indian dishes!
Ash!
Where do you go for Indian!?! I love love love it.. but I quite afraid of ordering it now since I have NO idea how many points it might be. How much oil do they use? I have no idea!!
Hope you are having a great Canada Day! I'm at work :(
PS. I love Aloo Gobi! It's my Fav!
the kiwi snack combo looks so yummy and I'm pretty sure I wouldn't want to come home to find them on my own either. yikes. Happy Canada Day!!
Jessica - You are too funny!! I am like that when I travel. I love to pick up new food goodies.
Crystal - You are going to be AMAZING at Boot Camp! I'm not going to lie - it's TOUGH - but so worth it. I took my progress pictures this morning and can totally see a difference after four weeks. There are women at all weights and ages and fitness levels and the instructor is great about showing variations on exercises with high and low impact options. Think of how amazing you are going to feel when it's done!! And if you need a kick in the ass to get you there, you know where I am!!
Kate - My favourite Indian restaurant in Toronto is at Nataraj (Spadina & Bloor) SO DELICIOUS!! On Saturday we went to a place on Queen East & Kingston Road. I don't know the name but it's good. I know what you mean about the Points. In the Dining Out Guide there are some Points values for Indian places and I just try to use my best estimation and take little bits of things. It's totally worth it to me! For me the challenge is finding the dishes with cream or gluten...
Kari - Glad I'm not alone with the raccoon fears!! One raccoon is okay - 3 is a little too much for me to handle!!
Hope everyone had a great Canada Day. Joey and I took an amazing never ending walk (in the BEAUTIFUL SUNSHINE!!) and ended up at a yummy vegetarian restaurant :) Review coming later this week!!
You were literally 5 minute walk from my house! I see that Indian place every day when I come home from work. I usually hit up gerrard street, Siddhartha or The Famour are my favs. I guess the key to Indian, as is the key to everything, is moderation!
PS! I think that place is called Real Taste of India!
Mmmm…those food pics all looked so delicious, Ash. And the raccoons were awfully cute, although, like you, I wouldn’t want to encounter them on my own. :-0
My daughter recently returned from a trip to India and came back with some really tasty veggie dishes that she made for us (she actually took a cooking class there). Lowfat, tasty and filling, even though, as you said, it didn’t look like much food at first.
I love shopping at Whole Foods, at Trader Joe’s, and at our local natural foods market here in Portland, NewSeasons Market. Between the three of those stores I can always find everything I need to keep me on the straight and narrow with great tasting, healthy, organic foods.

Awesome meals! I just might use you for some meal inspirations!
Yum yum yum and OMG the racoons!!! So adorable!!!
Hi! Just reading some "back issues" of your blog. You are such a foodie, its very inspiring! I used to shop at Whole Foods every weekend while visiting my Dad in Oakville (Oakville has a few of them). I know what you mean by the price ....eesh...
Your warm brown rice salad: Did you get that at Mocha Mocha? A friend told me its amazing, but I never ordered it because having a plate of rice seems a little dull to me. Maybe I'll try it next time.
